425g Dates
2 Medium Cooking Apples
2 Tablespoons Of Lemon Juice
2 Tablespoons of Coconut Sugar Or Soft Dark Sugar
1/2 Teaspoon of Bicarbonate Soda
Biscuit Base
350g Gluten Free Oats
300g Gluten Free Plain Flour
300g Coconut Sugar or Soft Dark Brown sugar
350g Plant Based Spread
1/2 Teaspoon Gluten Free Baking Powder
Method
First grate the apple with the skin on, place in a pan with dates lemon juice and sugar. Cook on a slow heat until the dates and apple break down.
Leave to cool down on the side.
For the biscuit base
Throw everything into a bowl. Mix with hands or mixer until it comes into a ball of sticky oat mix.
You will need a tin around 15cm/10cm.
Add half the oat mix and press into the tin firmly covering the entire base. Then you need to spread the date mix over the top. The other half of the biscuit mix , will need to be added to the top evenly. Bake in the centre of the oven. Preheated to 175c and cook for 55 minutes turning half way.
Remove from oven, cool slightly and then cut into squares before it cools to much.
Dust with icing sugar and enjoy.
